Hello. My name is Kevin Swanberg, and I am Jhorts Jerky. I started my beef jerky brand in April of 2020. My fiance and I were with child and expecting a son to be born on March, 15th. It was on that Sunday that the governor of California issued a shelter in place order due to the COVID 19 pandemic. I had worked my last night at the restaurant and was officially unemployed, and to top it all off my fiance was going into labor. "What a night!" After a 36 hour labor my fiance and I welcomed our son Aiden into this wild and crazy world on St. Patrick's day during an apocalypse, "let's be honest it was!" It was a few days later that I knew I had to pivot and challenge myself in order to provide for my family and the first thing that popped in my head was, JERKY!
This was the sketch that I made for my brand logo. The jerky pictured is the second batch I had ever made! What I feel is the most interesting part of my journey is that the marinade I came up with that night while sitting at the bar 5 years ago is and was the same exact recipe that I followed when I made my first batch of Jhorts Jerky in 2020! I never had to tweak the recipe from the first attempt years ago. I have just perfected my processes. Pretty cool, huh?!
